Cookery is a subject area that has not received much attention in weeding guidelines. Cookbooks are often kept on the shelves until their physical condition warrants the removal. In the meantime, there have been substantial changes in the recommended procedures for safely cooking and storing food. Dietary guidelines have also seen dramatic changes in the past few years. Students interested in cooking deserve information that reflects these changes.

Suggested Dewey Numbers to Check:

Check the 641s for your print materials on cooking, food preservation, and food storage. Also check your audiovisual materials, vertical file, and poster collections.

Specific Criteria for Weeding:

Millions of cases of food-borne illnesses are reported each year. Bacteria in food (especially from undercooked meat, poultry and fish) can cause intestinal distress, hospitalization, and even death. Salmonella, campylobacter, and E. coli are among the bacteria that have redefined the way foods must be safely prepared. Older methods of cooking (e.g. rare hamburger) can result in serious health problems for the user. Experts estimate that E. coli from under-cooked beef causes as many as 20,000 infections and over 200 deaths each year! Even when safety in food handling and preparation is not at issue, new dietary guidelines make many cookbooks obsolete and even dangerous to young cooks. New information on nutrition and health requires changes from traditional recipes and menus. Do you have cookbooks with recipes that disregard fat intake, sugar, salt, and cholesterol? Today's guidelines recommend that the fat intake be no more than 20 percent of calories. Special diet cookbooks have also changed with current information. Cookbooks with appealing and practical vegetarian recipes should also be a part of a current and healthful cookery collection.
